These peanut butter cookies are incredibly easy and delicious. I roll up a big batch, and keep them in the freezer, only pulling out enough to thaw and bake for dinner or a Saturday afternoon snack.
Ingredients
1 Cup Peanut Butter
1 Cup Sugar
1 Egg
Makes 12 cookies. I usually triple the recipe so that I have a decent sized bag full of peanut buttery goodies in the freezer.
Freezer Prep: Combine the sugar and egg, and mix well. Add the peanut butter, and stir it all up until it's well blended. Place mixing bowl in freezer for around 15 minutes to harden ingredients and make it easier to roll into balls.
Roll cookie dough into walnut sized balls, and place on a plate or cookie sheet for flash freezing. When you have rolled all of your cookie balls, flash freeze until each one is completely frozen. Once they are frozen, place all of the cookie dough balls into a one gallon freezer bag.
Cooking Instructions
Pull out the number of cookies you want to bake.
Thaw on a lightly greased cookie sheet.
When thawed, press balls into flat cookies with the tines of a fork.
Bake at 375 degrees for 10 minutes.
Serving Suggestion
Serve with milk, of course!
